 Zucchini and Bacon Fritters

Do you prefer a salty snack at snack time? Then this recipe is for you.

Ingredients:
3 medium zucchinis, striped (only the rind)
200 g diced bacon
20 g of coconut flour
1 teaspoon xanthan gum
1 egg
2 cloves of garlic, finely chopped
½ teaspoon of onion powder
Necessary amount of salt, pepper and butter

Instructions:
1. To "sweat" the grated zucchini, place it in a sieve in the kitchen sink. Sprinkle with plenty of salt and let stand for 10 minutes.
2. Meanwhile, cook the bacon in a large skillet until crisp, then remove from the skillet and set aside.
3. Rinse zucchini and drain well.
4. In a large bowl, mix zucchini, bacon, coconut flour, xanthan gum, egg, onion powder, garlic and salt and pepper.
5. Heat the bacon pan over medium heat, form small balls with the mixture and fry until golden. Turn delicately with a spatula so as not to break the fritters and fry for a few more minutes.
6. If necessary, add a spoonful of butter between each layer.

Tips: The smaller size makes these delicate fritters are easier to turn.
