 Zoodles with Chicken and Pistachios

Who said that soups are boring and insulting? Surprise yourself

Ingredients:
180g of broccoli cut in flower
2 cloves of garlic, finely chopped
500 ml chicken broth (or vegetable or meat broth)
120 ml of milk cream
170g of cheddar cheese in strands


Instructions:
1. In a large saucepan, sauté garlic over medium heat for about one minute.
2. Add chicken broth, cream of milk, and chopped broccoli. Increase heat to a boil, then reduce heat and simmer for 10-20 minutes or until broccoli is tender.
3. Add half of the cheddar cheese strands gradually, stirring constantly until completely melted. Remember to keep the heat low. Then add the other half. Remove immediately from the heat once the cheese has finished melting.

Tips: If you replace chicken broth with vegetable broth, then you have a low vegetarian carb.
