INGREDIENTS
• 2 chicken breasts, cut into cubes
• 1 lime, juice
• 1 big bunch spring onions, roughly chopped
• 1 tsp garlic, minced
• 1 cup coconut milk
• 1 cup tomato puree
• 1 tbsps. red curry powder
• 2 tbsps. avocado oil
DIRECTIONS
1. Heat oil in pan over medium heat.
2. Once oil is hot, add onion and cook for about 4-5 minutes.
3. Add chicken cubes in pan and cook for about 4-5 minutes, until cooked
through.
4. Add tomato puree and coconut milk.
5. Season with salt, pepper and red curry powder.
6. Cover and cook for about 5-8 minutes.
7. Once cooked remove from heat.
8. Serve with cauliflower rice and enjoy!
