Keto Spinach Pie

Inspired by the Easter cake of South America, this cake is surprisingly rich and very easy to make.

4 Servings
Prep Time: 60 minutes

Ingredients:
150g of almond flour
25g of sesame seeds
8g of psyllium powder
40g of butter
1 egg

Filling
4 eggs
200g of cream cheese
50g of cheese strands
2 cloves of garlic, finely chopped
350g of frozen spinach
Necessary amount of salt, pepper, olive oil

Instructions:
1. Preheat the oven to 180°C.
2. Mix the almond flour with the sesame seeds. Add a pinch of salt, the butter, the psyllium and the egg. Knead until it is a uniform mixture and place it in a pan, pressing the dough against the bottom until it is even. Bake the base for 10 minutes.
3. Heat a frying pan with a splash of olive oil at medium heat, add the chopped garlic and after 2 minutes add the frozen spinach. Cook until thawed and seasoned. Add on top of the base.
4. In another bowl add the cream cheese and mix, slowly add the eggs, beating constantly until it is a uniform mixture. Place on top of the cake and sprinkle with the string cheese.
5. Bake for 30 minutes or until the surface of the cake is golden.
