Keto Recipes - Creole Empanadas
This low carb version of empanadas argentinas is incredible. Just remember, patience makes perfect.

Prep Time: 120 minutes
Ingredients:
Dough
100g of almond flour
40g of coconut flour
½ tablespoon xanthan gum.
100g of cold butter
55g cold cream cheese
1 lightly beaten egg
2 tablespoons apple vinegar
Whipped egg to brown the dough (optional)
Filling
250g of minced meat
2 tablespoons of chopped garlic
½ onion cut into small cubes
1 green onion or spring onion cut in slices
Meat broth (optional)
Seasonings to taste (salt, bell pepper, hot bell pepper)
Instructions:
1. Add in a processor the almond flour, coconut flour, xanthan gum and a pinch of salt. Process until combined.
2. Add the butter and the cream cheese, press for a few seconds until the mixture becomes lumpy. Put the mixture on film paper and let it cool in the refrigerator for at least one hour.
3. While the dough cools down. Fry the onion and the green onion in a frying pan with a splash of olive oil. Add the garlic and the minced meat one minute later. Sauté the meat until it is cooked. Add a dash of meat broth (optional) and season to taste. Let the filling cool down.
4. Take the dough out of the refrigerator and place it between two pieces of lard. Spread the dough with a rolling pin. Give it a round shape with a large cup/mould/small ball. It is preferable that it is not very large as it risks breaking. Let the lids cool in the freezer for 5 to 10 minutes.
5. Preheat the oven to 180°C. Remove the lids from the freezer and add the meat filling. Close the empanadas gently and with a fork mark the edge to shape them. Place the empanadas in a baking pan on greaseproof paper and brush the tops with beaten egg to brown (optional).
6. Bake the empanadas for 20 minutes or until golden brown.
Tips: The dough of the empanadas is very difficult to handle and should always be cold. There is no problem if the lids are a little thicker than usual since it will be easier to close them that way. If the dough gets hot and it is unwieldy to put the lids together, you can put it in the freezer for 5 to 10 minutes before continuing.
