 Hake in Green Sauce 


Inspired by the original Basque recipe, this great dish is simple and healthy.

2 Servings
Prep Time: 30 minutes

Ingredients:
2 fresh hake fillets
1/2 onion cut into medium cubes
1 garlic clove finely chopped
100 ml of dry white wine
100 ml of fish broth
½ teaspoon xanthan gum
4 cooked asparagus
¼ cup fresh chopped parsley leaves
Necessary quantity of olive oil and salt

Instructions:
1. Sauté onion in a pan with olive oil over medium heat until transparent. Add garlic and xanthan gum. Cook for a few more minutes.
2. Pour the white wine and broth into the pan with the onion. Mix well so that it does not
leave lumps and cook for 10 minutes. Add parsley and mix. Correct the salt if necessary.
3. Add the hake and cover the pan. Cook the hake for 5 minutes on each side.
4. Serve on a plate the hake and the sauce together with the boiled asparagus.

Tips: The original recipe is usually accompanied by clams, which give the dish a delicious sea flavor.
