Cauliflower Hummus

 Cauliflower Hummus

The low-carb version of one of the best known Arabic dishes

Ingredients:
1 kg of raw cauliflower flowers
3 cloves of garlic
3 tablespoons of lemon juice
Necessary quantity of salt, smoked paprika and olive oil.

Instructions:
1. Combine cauliflower, garlic cloves, 2 tablespoons oil, 2 tablespoons water and half a teaspoon salt in a microwave-safe bowl. Microwave for approximately 15 minutes, or until the cauliflower is soft and dark.
2. Put the cauliflower mixture in a food processor. Add the lemon juice, 3 tablespoons of olive oil and a pinch of salt. Process until creamy and smooth, adjust seasoning if necessary.
3. Serve the hummus in a bowl and sprinkle with olive oil and a pinch of
paprika.

Tips: Accompany hummus with celery, cabbage chips or our recipes for crackers and keto bread.
